Update from developer:
We appreciate your outreach regarding the Waterworks Food Hall’s anticipated opening and liquor license application. We currently intend to launch the main phase of the Food Hall this fall, with permits for the individual vendors kiosks having been submitted in April and fit-out scheduled to commence shortly. We are very excited to bring the Food Hall to fruition and open the doors to the public after many years of hard work. We believe Waterworks will be an incredible amenity to the local community, and we are constantly being asked as to when we will open.

As we work towards our upcoming launch, obtaining a liquor license has been a key component of our business plan. It would be difficult to achieve the charm of a European food hall if our guests weren’t able to sample a selection of wines or grab a pint as they select and sample foods from our highly curated vendor mix. We plan on having 16 food vendors available at Grand Opening, all with layouts conducive to chef table experiences with seating at their respective kitchen counters.
However, it is entirely understandable that the application would raise the request for clarification on the operational specifics relating to the Food Hall and its liquor license application.

Proposed Hours of Operation
· Mon – Wed – 11:00 a.m. to 10:00 p.m.
· Thurs – Fri – 11:00 a.m. to 12:00 a.m.
· Sat – 10:00 a.m. to 12:00 a.m.
· Sun – 10:00 a.m. to 8:00 p.m.

Outdoor Areas
This application does not include patios on Brant Street or Maud Street, although we look forward to activating these spaces later in 2024.
The application includes the courtyard, which is interior to the building but open to above. This courtyard sits entirely within the building confines. This courtyard is accessible from inside the hall, and also through the carriage way on Richmond Street.

St. Andrew’s Playground
Liquor will not be served in the park, nor will any guests be permitted to take drinks outside the premises. Waterworks will have both active and passive security measures in place ensuring compliance with this policy, as required to maintain good standing with the Alcohol and Gaming Commission of Ontario
