I have a lot of respect for people who can wait tables well. I know I would either end up in tears or in handcuffs after dealing with an unreasonable customer. Have you read the Waiter Rant blog or book? He addresses many of the same issues (though his blog is not as interesting anymore since he got his book deal and stopped waiting tables... his gain, my loss!)
